What makes it a garlic namkeen
Namkeen is the savoury half of an Indian snack table, and a garlic namkeen is simply one made with garlic. Ours is gathiya: besan (gram flour), garlic, ajwain, coriander and red chilli, fried in 100% groundnut oil and never palm.
In Hindi the same snack is lahsun gathiya, also spelt lehsun gathiya or lasun gathiya. It is thicker and crunchier than garlic sev or bhujia.
It has been made this way in Rani, in Pali district, Rajasthan, since 1952, by the same family, in batches small enough to count.
